Lunch wasn’t looking very promising today as I scavenged around the fridge for something to make real fast before meeting a friend. I saw a tub of blackberries in the fridge and thought, Oh, if only those were proper enough to eat as a meal! Immediately I began envisioning myself sitting on a sunny patio, eating a decadent salad topped with fat, juicy blackberries.
So, despite the cold and overcast weather outside, I decided to make myself a quick little salad with the blackberries. It was so easy and fresh that I had to share! You’ll love this salad recipe if you’re in a healthy eating slump, or you’re out of ideas when it comes to making affordable, yet tasty meals.
Salad:
- Two cups of spinach or mixed greens (I used half romaine/half spinach)
- 8 cherry or grape tomatoes, sliced in half
- 10 blackberries
- Crumbly blue cheese
Dressing:
- One part extra virgin olive oil
- One part red wine vinegar
- One part grainy Dijon mustard
- A few splashes of lemon juice
The Quick & Easy:
Wash and tear up your mixed greens. Throw on top your blackberries, blue cheese, and halved tomatoes.
In a separate bowl, mix together your salad dressing. I like a lot of dressing so I made a generous batch. Drizzle your dressing on top of your greens and chow down!
